Raclette - The Swiss National dish

According to legend, the meal raclette originated in the Swiss Alps when an old shepherd accidentally placed his cheese too close to the fire. To salvage what he could, he scraped up the remnants onto a slice of bread and discovered, to his surprise, that it tasted heavenly—thus, raclette was born (the word “racler” indeed means “to scrape”). Today, raclette is the Swiss version of Friday night comfort food, best enjoyed with almond potatoes, pickled onions, cornichons, and a selection of cold cuts. And what’s in the glasses? Kirsch from Terroir Suisse, of course, and perhaps a glass of white wine, such as a Riesling or Pinot Gris. Raclette is meant to be savored with a focus on socializing. “En Guete,” as we say in Switzerland (Enjoy your meal).

Enjoy raclette in a classic way with boiled fine potatoes like Amandine/Asperges/Almond potatoes, cornichons, and pickled onions. Or why not add other delicacies like air-dried ham, spicy sausages, mushrooms, pineapple, broccoli, bell peppers, etc. Only imagination sets the limits. En Guete!

Ridiculously simple - unnecessarily delicious

Turn on the pot with potatoes, set up the raclette grill on the table, set out plates and cutlery, boil tea, prepare and arrange all the accompaniments like broccoli, zucchini, cornichons, mushrooms, pickled onions, and more.

And if you sprinkle a little paprika powder on the cheese before it goes into the raclette grill, you get a lovely crust. Serve with freshly boiled new potatoes.

Dinner is ready. A kind of Swiss tacos in all its simplicity, playful preparation at the table, endless possibilities for variation in terms of accompaniments. This way of eating contributes to what we think is most important; being together, eating, and enjoying.
