Fondue to love

There is food that is pure joy, and we dare to claim that a classic cheese fondue is so much more than its components. It’s dear memories of a ski vacation in the Alps, a dinner with good friends, an exciting outdoor excursion with fondue over an open fire, and more. Memories to love and a meal to long for when darkness spreads in winter.

In Switzerland, most families have their own recipe, their own blend. Our luxurious blend is based on a classic Moitier-Moitier mixture, i.e., half Gruyère AOP and half Vacherin Fribourgeois AOP, seasoned with a mountain cheese. Kirsch spices it up, wine adds flavor, and cornstarch gives structure. No additives. Just excellent taste.

Our blend is super easy to prepare; cut open the bag, pour it into a suitable pot (preferably a thick-bottomed enameled cast-iron pot or a ceramic one), heat it over medium heat while stirring until it becomes smooth and binds. Before pouring in the mixture, rub the pot with a garlic clove. If you’re outdoors, you can heat the bag directly in a water bath!

The bread is crucial. Try to find a Levain-type bread, preferably with a darker crust. For fondue, the Swiss drink a drier white wine like Riesling; their domestic favorite is called Fendant. And in a small schnapps glass, pour some Kirsch. The Swiss sip on it occasionally to aid digestion; sometimes, they dip bread cubes in Kirsch before putting them in the pot. Yum!
