Gschwellti

“Gschwellti” is a classic recipe for boiled potatoes with accompaniments, and the absolute best accompaniment is undoubtedly cheese. Anyone who has tasted this classic combination of warm and sweet potatoes, cold cheese with a bit of saltiness, and a simple sour cream sauce will never forget it. It’s an easy way to turn cheese into a hearty meal, and the cheese can even be paired with slightly heavier red wines. It’s simply a Friday treat like no other!

Use a finer potato such as Amandine, delicacy potatoes, or almond potatoes. Prepare a simple sour cream sauce with chopped chives and a pinch of salt. Serve with 2-4 hard cheeses, preferably Gruyère, and some soft cheeses such as Époisses, small goat cheeses, creamy Brie, blue cheeses, etc. Like a midsummer plate without herring, but with cheese. Everything works!

Enjoy with a good glass of wine, en Guete!
