Willi Schmid – ”The cheese whisperer”

Semi-hard cheese from Willi Schmid, made from Braunvieh milk. Produced only during the winter months under hay-feeding season. The flavorful high grasses on Toggenburg’s natural meadows give the cheese its fine aroma. Warm flavors of toffee, brioche, vanilla, and light toasted notes. The milk comes from cows owned by farmer Jörg Scherrer from Nesslau. In the summer, his cows graze on Alp Säntis – in winter, they deliver their fine milk to our Bergmatter.
