He uses two different types of Italian mold cultures and natural rennet; the veins are created with distinct pockets in the cheese mass where the mold cultures have free rein. With its cathedral-like appearance borrowed from another world, it takes its place in a natural way. Cut it open and reveal one of the most beautiful mold marblings in the cheese world; the fine light blue to dark green veins grow into the core from the outside.
The Jersey milk, with its high fat and carotene content, coats the palate, and then it gets loaded with the powerful mold flavors with an incredibly long finish. Willi Schmid: “It has an unmistakable, exquisite nutty aroma with a slightly smoky tone. The cheese mass is creamy and has a yellowish color, the characteristic of Jersey milk with its high beta-carotene content.”
