This flavorful, vegetarian “guilty pleasure” brightens up every meal, perfect to pair with a creamy soup.
Ingredients:
- Gruyère AOP Reserve from André Rust, Terroir Suisse
- Rustic sourdough bread with a darker crust
- 1 large red onion
- Olive oil
- Fresh black pepper
- (Fresh thyme)
- Sherry
- Butter
- Grainy mustard
Caramelize the onion over medium heat in a pan with oil or butter, stirring occasionally until golden and delicious. Add a bit of balsamic vinegar at the end and a pinch of salt.
Toast the bread in butter and oil in a pan over medium heat until perfectly golden brown. Top with the caramelized onions and cheese, then bake in the oven at about 175 degrees until the cheese is melted and golden.
Slice in half and serve with a fresh green salad.
