Birehong - sweetness without sugar

In 1749, a farmer selling ‘Birrähung,’ i.e., pear honey in Swiss German, was portrayed. Since the 1600s, this coveted and somewhat cheaper product than honey was sold at markets as a sugar substitute. Sugar was prohibitively expensive until the sugar beet entered the scene, after which Birehong lost its significance.

Our Birehong is produced in Inner Switzerland according to an ancient recipe, just like the origin. Our producer uses three different ‘Hochstammbäume,’ i.e., the beautiful high-stemmed trees standing as solitaires in the fields; Gelbmöstler, Schellen, and Schweizer Wasserbirnen. From these organic food pears, the juice is pressed and then slowly reduced to a viscous mass—Birehong is born.

Fantastic in cooking, in salad dressings, with our Gruyères, and much more. Drizzle it over some raspberries and ice cream, yum.
